Spiced Apple Jelly Or Syrup
Apples are high in pectin, so when I make apple jelly, I generally cut back on the amount of fruit pectin. Sometimes you end up with jelly and sometimes you end up with apple syrup that is delicious on waffles or pancakes.
Our spiced apple creation this year turned out both ways. You may have a jar that set up as a fairly firm jelly, or you may have a more pourable syrup. Ask Jimmy, and he will tell you: they are both delicious. He loves the syrup on waffles in the morning.
We used the apples from the big tree in our backyard.
Normally, this tree produces very little fruit. But this year was an exception. We harvested hundreds of them. We don’t spray our apples, so they don’t have that oh-so-perfect supermarket look. But they taste way better.
The only thing is, no one knows what type of apple tree it is. My mom couldn’t remember. My brothers don’t know. All we know is that Dad planted it probably 35 years ago.
